When I became a vegan over a year ago, I didn’t even know what quinoa was or that it even existed… (I know, it’s a shame). But, after discovering how versatile it was, it has become one of my favorite things to eat; not to mention that it’s a highly nutritious superfood. If you are looking for a one-stop shop for something that can give you a day’s worth of nutrients, quinoa is the perfect choice.
Something that I am constantly trying to get an abundance of in my vegan diet is protein and iron. Luckily, quinoa is one of the most protein rich foods you can have (a half-cup has 14 grams of protein). In fact, quinoa has more protein than any other grain. Now, what about iron? Well, one cup of quinoa nearly meets a day’s requirement of iron, but if all this is not convincing enough for you, quinoa is also rich in fiber, calcium, potassium, magnesium, and it is gluten-free!
Okay, so now we understand all of quinoa’s superpowers, but this recipe is for quinoa COOKIES.
